Breakfast Quinoa Recipe
Ingredients:
1/2 cup of Quinoa
Alternative milk (Oat, Coconut, or Almond)
1 Sweet potato
Fruit of your choice (apple, pear, berries, etc.), diced into small cubes
Cinnamon
Cardamom
Optional Toppings:
Pumpkin seeds
Sunflower seeds
Chia seeds
Walnuts
Almonds
Goji berries
Directions:
Cook the quinoa and sweet potato separately. You will combine them after
they have been cooked.
Cook the quinoa on stovetop as directed.
Peel sweet potato and cut into cubes. Place into pot and cover with water.
Bring to boil then lower heat to medium. Cook until sweet potato softens.
When quinoa and sweet potato are cooked, combine them in one pot and
add 1 piece of fruit (apple or pear) diced.
Add your choice of alternative milk. Add about 1/4 cup of milk, give or take.
Add cinnamon and cardamom to preference.
Both cinnamon (Gui Zhi) and cardamom (Sha Ren), are warming herbs used in
East Asian Medicine, and promote healthy digestion.
Add gou ji berries (Gou Qi Zi) - optional.
Gou ji berries are used to nourish the Liver and benefits the eyes.
Allow everything to gently cook on Low for about 15 minutes.
Stir occasionally. Add milk as needed to make the consistency
you prefer.
Finish:
Serve your quinoa breakfast in a bowl and top with seeds and nuts of your choice.
Add berries for an antioxidant boost.
